Inca Flame™ Pickled Ají are made from select native
Ají peppers grown in coastal valleys of Southern Peru. Fully
ripened ají pods are carefully hand-picked and pickled with
vinegar, sugar, herbs and spices. No artificial colors, flavors,
nor preservatives are added. A strict quality control program throughout
processing assures the highest quality product. Peruvian ají varieties
have the advantage to incorporate a new and unique flavor to your
products and they come in a color spectrum ranging from dark red
to yellow.
Ají Varieties:
- Ají Amarillo - Capsicum baccatum (15,000 Scoville units)
- Ají Rocoto - Capsicum pubescens (70,000 Scoville units)
- Pinguita de Mono - Capsicum annuum (80,000 Scoville units)

Fresh ají, vinegar, sugar, mustard
seeds, pepper, cinnamon, herbs and spices.
