In partnership with Conservation International, over 250 indigenous people gather these wild-crafted nuts, which grow in pristine tracts of untouched primary Peruvian rainforest. The nuts develop inside woody pods similar to a coconut shell, and when they fall from the trees, they are carefully gathered and tracked to avoid over-harvesting, which could lead to either wiping out the trees or the animals that depend on these nuts for food. The fair trade income from this product provides a sustainable income, and an alternative to clear-cutting rainforest for ranching, farming, or mining.
Every ingredient is similarly sourced from organic farmers and cooperatives to support improved health for both the planet and her people.

Many suppliers of agricultural commodities provide products with questionable purity in an attempt to fill market demand. But we focus on artisinally-crafted, premium-quality products to ensure both excellent flavor and nutritional benefits.
A better, cleaner RAW
Quality control is especially important for RAW ingredients like cacao and goji. Since cacao products are normally roasted and extracted at high temperatures, most producers don't trouble themselves with basic hygiene steps, often leaving raw cacao uncovered while it ferments, attracting rodents and insects that leave behind droppings and serious pathogens.
Past tests of competing RAW cacaos have shown unacceptable levels of pathogens like E. coli, staph, and salmonella. We practice strict oversight and testing with our suppliers to ensure a vibrant, delicious product!
Transparency in action
RAW Foodists are well aware of the slippery usage of terms like "raw" and "cold-pressed" in food marketing. Many "raw" nuts, for example, may
still be steamed, boiled, or exposed to high temperatures during shelling or drying, but are labeled "raw" simply because they aren't roasted.

This mix contains several RAW ingredients (under 118F) and several ingredients that are near-RAW: handled as carefully as possible to ensure that proteins, fats, and flavors are not damaged by overheating.
Protecting the RAW goodness
The cashew meat is never exposed to temperatures higher than 50˚C (122˚F).
Unroasted: Brazil Nuts
However, ours are carefully handled to maximize flavor and nutrition value. The in-shell nuts are quickly shade-dried after collection to prevent moisture and mold, then put through a series of controlled processes and inspections which ensure that poor quality nuts can be eliminated at several points in the process.
First they are inspected for mold, then quickly dried at 131 C before undergoing a moisture test. Then the nuts (still in their shells) are steamed at 40 psi for 10 seconds to clean and sterilize the outer layers. Then the nuts are shelled and graded. To prevent oxidation of the nuts, only the best, whole nuts are selected for consumption.
The nuts are dried a final time before undergoing thorough chemical testing for aflatoxins. Then they are vacuum packed and shipped to a more complete processing facility in Lima. There, the nuts are weighed, moisture tested (again), and sorted (again) to divert broken nuts for oil production.
All nuts undergo a final steam decontamination (48 seconds at 177 C) before cooling and final testing for microbes and aflatoxins.
