Typical cashew-shelling machinery uses high-heat process that ends up "cooking" the cashew (at best) or scorching them (at worst), damaging proteins, enzymes, and oxidizing the cashew's delicate essential fatty acids. Even the best organic cashews can look yellowed and taste bland, soapy, bitter, or funky. Oftentimes, roasting and salting is the only way to cover up these flavors — but nothing can hide the negative health impacts of oxidized fatty acids.

Our RAW Verified cashews are a ground-breaking, first-ever, ACTUALLY RAW cashew, produced in a painstaking process without any heat. After years of development and experimentation, our supplier — an organic, beyond-fair-trade cooperative in Bali — has perfected the world's only hand-cracking process for cashews, using absolutely NO HEAT, EVER. It is a difference you can taste, smell, and feel, producing a fresher, more delicious and nutritious cashew than anything available.
While most cashew-shelling operations produce about 13kg of cashews per worker each day, our painstaking RAW Verified hand-cracking only produces about 4.5kg of cashews per worker each day.
Instead of dumping huge containers of cashews into a steamer, boiler, or roaster for shelling, each cashew is cracked open by hand by a skilled artisan using special safety gloves and equipment that protects their skin while preventing contamination of the cashew itself.
The cashews are sun-dried in covered greenhouses and vacuum sealed for shipment from Bali to our air-conditioned facility in Southern California.
