Vanilla “beans” are actually the pods of an orchid that grows in moist, lush tropical jungles. Natives have cultivated this remarkable gift of nature for centuries, but most vanilla that reaches western palates is a mere shadow of what it could be.
Our beans are grown organically in fair-trade native cooperatives, then hand-picked and cured in the sun.

Organic Vanilla Beans

The beans are cured on-site before importation to the states for further processing. Most beans destined for the U.S. market are drier, less rich in vanilla oil. We select a variety usually reserved for European markets, with higher levels of moisture and natural vanilla oils. Heat processing also destroys the natural vanilloid compounds, eliminating their health benefits (and risking mold contamination). All our beans are processed at low heat, for maximum nutrition.
The beans are ground to powder in an Organic facility, but unlike most suppliers of vanilla powder, ours undergoes an added 12 day curing process which allows the bean’s natural flavor and aroma to reach full maturity. By avoiding high-heat processing, we maintain more of the inflammation-fighting vanilloid compounds.
