Essential Living Foods was among the first to supply Fair Trade and organic certified Açaí, and our partners continue to work on reducing the carbon footprint throughout our supply chain in Brazil.
Our partners also collaborate with local NGOs to ensure positive social and environmental impacts, which to date include preserving over two million acres of Amazon rainforest, the construction of village schools and community centers, sustainability and resource-management training, and conversion of facilities and local community businesses to alternative fuels (such as burning Açaí seeds instead of virgin wood).
Açaí for nutrition and great taste
Since Açaí can lose much of its nutritional value after harvest, our entire supply chain is optimized to ensure speedy processing. Within 24 hours of harvest, the berries are washed, de-seeded, and puréed at our pristine, certified organic facility on the edge of the rainforest. The thick, antioxidant-rich purée is quickly flash-pasteurized (as required by law), then collected in stainless steel containers.
A more accurate name for freeze drying would be "vacuum freezing." First the purée is frozen, which causes the water to crystallize. Then a vacuum is created inside the machine, which causes the water to 'boil' off, essentially as 'cold steam.' Freeze drying preserves foods much closer to their original state than high-heat processes - which oxidize fats, denature proteins and carbohydrates, and destroy delicate phytochemicals and antioxidants, and of course damaging flavor and aroma.
Other Açaí powders may contain maltdextrin and other fillers and are usually dried at high temperature, boiling off flavor and aroma chemicals, oxidizing delicate fatty acids, and damaging vital antioxidants.
In addition to removing water, vacuum freezing tends to boil off some of the more volatile components, including citric acid. Since citric acid acts as a natural preservative, a small amount is added back in to the final powder to keep it fresh.
The resulting powder is vacuum packed and shipped to our air-conditioned facility in Southern California.
