Clean and simple

Coconut oil is not always a clean product — it is a commodity whose raw materials are sourced from multiple farms with sometimes questionable quality standards. Traditionally, coconut oil is made from copra, the withered husks of halved coconuts, which sit in open-air drying and fermenting piles, often leading to contamination and mold growth.

In order to ensure the highest quality and flavor, our small-holder farmers are trained in best-practices, and a combination of spot-testing and financial incentives helps to ensure maximal purity levels. Their farms are also regularly certified by organic field inspectors.

Empowering Micro-Entrepreneurs

Rather than let the coconuts sit around in exposed conditions, the fresh-harvested coconuts are drained of their coconut water and immediately sun-dried. If weather doesn't permit drying, the coconuts are dried in a traditional Philippine wood-fired ovens called pugons. Farmers are incentivized to properly dry their product so moisture levels are no higher than 6%.

Harvest & Processing

Shortly after drying, the coconuts are brought to a central-processing facility where they are de-hulled and the coconut meat is mashed into high-pressure expellers for pressing. This equipment extracts the coconut oil without any solvents or chemicals, and sterilizes the oil at 107C/224F, high enough to ensure microbial purity but cool enough to prevent oxidation and smoky or rancid flavors.

This virgin, first-pressed oil is mesh-filtered and finally vacuum treated to remove volatile aroma molecules, creating a neutral-smelling oil that won't overpower other ingredients in your recipes. The final product is sealed for shipment to our climate-controlled facility in Southern California.
